Egg-cellent Choice

I am an avid label-reader. However, occasionally when grocery shopping I just instinctively grab items that are my staples. I recently grabbed a carton of Egg Beaters egg substitute without really paying much attention to the package. However, when I whipped up a batch of scramble egg sub I gave the label a second look. What piqued my interest was how incredibly egg-like my faux eggs tasted. Turns out Egg Beaters is now adding a little yolk to their normally all egg white mix. I truly don’t mind egg substitutes, but there is no doubt that the addition of yolk really gives a richer flavor. In addition, the resulting scramble cooked up with more structure and a creamier consistency. As an added bonus, the addition of yolk adds zeaxanthin, a carotenoid that is important in eye health. Research has found that when we started cutting back on eggs and egg yolks in our diet in an attempt to manage cholesterol levels, we lowered our intake of zeaxanthin which actually increased incidences of macular degeneration (an eye disease).
